This coffee is produced by COHORSIL, a coop created by smallholder farmers in the Siguatepeque region of Honduras. At an altitude of over 1,350 meters, the exotic environment possesses excellent conditions for producing high quality coffee. COHORSIL gathers coffee cherries from individual farmers at various collection centers in the area. The co-op performs all the processing under strict quality control to satisfy their customers and gain increased benefits for the producers at the same time. The Cerro Azul showcases the character of Honduran coffee and the high quality being produced from this region.
Honduras is a relatively small but efficient coffee producer. It ranks as the 6th largest producer globally, and 4th largest Arabica producer. Flavors range from apporachable chocolate and nutty, to exotic tropical fruits.
